Christmas Food - Christmas Leftovers
Sometimes at Christmas time we are left with an abundance of food that needs to be eaten. It can be difficult to think of a different way of using up that leg of ham or turkey. Here are some ideas:
Ham or Turkey
Ham and Egg Slice
Oil and line base of 20cm x 30cm lamington pan. Heat 2 teaspoons olive oil in medium frying pan; cook 2 thinly sliced medium brown onions and 2 cloves crushed garlic, stirring, until onion softens. Cool 5 minutes. Combine onion mixture in large bowl with 2 cups (360g) finely chopped cooked ham, 6 eggs, 300ml cream, ½ cup finely grated parmesan cheese and ¼ cup finely chopped fresh basil; pour mixture into prepared pan. Bake, uncovered, in moderately slow oven about 30 min or until set. Serves 8.
Pizza
Shred the ham or turkey up and use as a pizza topping on your favorite pizza base
Toasted Ham Sandwich
Make a sandwich with sliced ham, cheese and a spoonful of cranberry sauce and toast it..
Quiche
Cook a pastry shell, place cut up ham or turkey on the base, add some whisked up eggs and milk, sprinkle with cheese and cook until brown.
Leftover Candy Canes = Peppermint Sprinkle Topping
Wizz up those leftover peppermint candy canes in the food processor with a sharp cutting blade for a colorful sprinkle topping.
Use as a topping:
- on ice-cream,
- fold through some softened ice-cream and freeze,
- use on top of cakes and pavlovas,
- mix with grated dark chocolate
