Glazed Leg of Ham

One leg of Ham
One cup of marmalade
One cup of brown sugar
Packet of Cloves

1) Place the ham in a 200 degrees Celsius pre-heated oven for approximately 20 minutes.
2) Remove the ham leg from the oven and cut away the skin and excess fat.
3) Score diamond shapes into the flesh/fat of the ham. Run diagonal lines from right to left and again from left to right using a sharp knife
4) Place one clove in the corner of each diamond until the entire ham is covered with the cloves.
5) Rub the ham with the brown sugar and then place in the oven for another 20 minutes.
6) Heat the marmalade over a low heat until it becomes a 'runny' consistency.
7) Remove the ham from the oven and baste with the marmalade, return to the oven and bake for a further 20 minutes, basting occasionally. Carve into slices and serve on a large platter.

Raspberry Relish

1 Granny Smith Apple
1/2 cup pecan nuts, toasted
1 punnet of raspberries
juice 1/2 lemon

1) Peel Core and finely dice apple.
2) Combine all ingredients and spoon into a bowl or jar and cover.
3) Refrigerate for up to 1 week.

Serve with roast turkey, ham or chicken

Raspberry Relish

Storing a Leg of Ham
Wrap leg of Ham in a damp tea towel and keep refrigerated.
Wring out the tea towel in cold water with a dash of vinegar.
Replace with a fresh tea towel every couple of days.


To make a platter of carved ham or turkey look more appealing place a small bowl of cranberry jelly or raspberry relish in the middle of a large platter then arrange the carved ham around it.
