Champagne
Champagne is always popular at Christmas time. Provided below are 3 great ways to serve champagne to your guests. For each recipe you will need a 750ml bottle of champagne to serve 4 to 6 people. The champagne should be chilled and drinks can be served immediately.
Strawberry Bellini
100g of strawberries (1/3 of a punnet)
1/3 cup Grand Marnier
1 tablespoon castor sugar
1 teaspoon Grenadine cordial
Wash, hull and then puree or blend strawberries, add Grand Marnier, add castor sugar and cordial. Divide strawberry mixture between glasses and top up with chilled champagne
Champagne Blossom
1 cup orange juice
½ cup Cointreau
1 tablespoon castor sugar
Combine orange juice and Cointreau and add castor sugar. Stir until sugar dissolves. Divide mixture between glasses and top up with chilled champagne
Cocktails
A cocktail is a drink consisting of two or more ingredients, stirred or shaken, and should be drunk as soon as possible after serving. Note: To avoid overindulgence try splitting the alcoholic / rich cocktail into smaller glasses and give your guests a taste. Decorate glasses with split strawberries or cherries.
Egg Nogg
1 egg
1 tablespoon sugar
30ml brandy
milk
nutmeg
Shake egg, sugar and brandy well. Strain into a glass and fill with milk. Sprinkle nutmeg on top and serve. Note: Gin, rum or whisky can be substuted for brandy.
Bloody Mary
Dash Worcestershire sauce
2 Drops Tabasco sauce
8ml lemon juice
salt and pepper
3 cubes ice
60ml vodka( white rum, gin or tequila can be substituted
Tomato Juice
Put worcestershire sauce, tabasco sauce, lemon juice, salt and pepper. Mix together and then add ice cubes and vodka. Top with tomato juice. Serve with a swizzle stick , or stick of celery.
Golden Dream
30ml Galliano
15 ml Cointreau
15 ml Orange Juice
15ml Cream
ice
Shake or blend ingredients with ice and strain into a champagne glass.
Coffee
Make your after dinner coffee special by topping it with flavoured whipped cream. The recipes below will make enough whipped cream to top up 4 large mugs of coffee.

Mint Chocolate Coffee
½ cup of cream
1 table spoon crème de menthe
Grated chocolate
Whip cream, stir in crème de menthe, spoon on to hot coffee and top with grated chocolate

1 ½ table spoon Irish crème liqueur
Cinnamon
Whip cream, stir in Irish crème liqueur, spoon on to hot coffee and sprinkle lightly with cinnamon |

Creamy Cola Spider
1.25 litre bottle of cola
1 cup vanilla ice-cream
1 tablespoon lemon juice
Combine all ingredients; blend in two batches until smooth. Makes 8 to 10 cups.
Chocolate Banana Shake
1 ½ litres milk
¼ cup chocolate flavoured topping
3 chopped bananas
3 eggs
Combine all ingredients; blend in two batches until smooth. Makes 8 to 10 cups.

Wassai - Christmas Drink from Britain
The basic Wassail hails from Britain where it has been a seasonal favorite for centuries.
Ingredients:
1 gallon apple cider
1 orange
1 lemon
4 cinnamon sticks
1 tsp whole cloves
1 1/2 tsp allspice
1/2 tsp nutmeg
1) Slice up the orange and the lemon into very thin sections, then scatter them around the apple cider, swirling the liquid well. Throw in the cinnamon sticks and cloves, then add the allspice. Let the mixture set for half an hour to allow the spices to diffuse throughout the drink.
2) P place the liquid over a low flame and heat gradually. Simmer for an hour, then allow to cool for at least 10 minutes.

Serve by pouring through a strainer, then top each cup with a bit of nutmeg. For a variation with a little kick, add brandy or mead about 5 minutes before done simmering.
Glühwein (Hot Mulled Wine) - German Christmas Drink
A great German tradition - try some hot mulled wine.
Ingredients:
1 bottle of dry red wine
1 lemon
3 tbsp of sugar
3 cloves
2 sticks of cinnamon
1 tsp cardamom or ginger
1) Heat the wine slowly, being careful to avoid bringing it to a boil. ( You don't want to accidentally make hot grape juice!).

Slice the lemon finely and add when the liquid is hot. Then add the sugar and spice. Allow the mixture to cool to just above room temperature.

Serve by pouring into cups through a strainer. Top with cardamom or ginger.
Cafe Mexicano - Christmas Drink from Mexico
Mexico celebrates Christmas with a twist, by enjoying a fine chocolate coffee.
Ingredients:
1 1/2 cup coffee
1/2 cup heavy cream
4 tsp chocolate syrup
3/4 tsp cinnamon
1/4 tsp nutmeg
1) Start with a fine dark brew. A French roast works really well for this drink. Keep the coffee hot.
2) Stir the cream until it's thickened. Pour the chocolate syrup evenly into four warmed cups. It's easy to warm cups. Just fill them with a small amount of water and place into the microwave for a minute, making sure the water doesn't all boil away. Then remove and pour out any excess water.
3) Add the coffee to the chocolate and blend well. Then, sprinkle on the cinnamon and nutmeg and top with cream.
American Eggnog
For a good old-fashioned American Christmas drink, mix a dash of rum or brandy into some eggnog. Top with an ounce of triple sec and let the liqueur dribble down into the drink. Sprinkle with nutmeg and have a party!
